These bars are chewy with an almond butter and honey mixture binding together the oats, nuts, coconut flakes, and quinoa.
To make the granola, mix all dry granola ingredients, including the soaked quinoa, in a bowl. Heat oil and honey in a small saucepan until thin; stir into dry ingredients until mixed. Puffed or popped quinoa can be really expensive to buy but its so easy to make it yourself at home by dry-frying it in a large pan on the hob. To make these granola bars really filling I also added rolled oats along with peanut butter, honey and coconut oil to bind it all together. These dark chocolate chunk quinoa granola bars are so good!
