Scarborough Fair chicken. I named this recipe after the song that inspired me to experiment with wine, herbs and chicken which always just seems to go together for some reason. Remember that part of the song that says parsley, sage, rosemary and thyme in the classic Simon and Garfunkle song, Scarborough Fair. I hope you will enjoy my results as much as Alicia and I do.
Served it with Alex's rosemary and garlic rolls.
What a fantastic dinner we had last night!

This chicken reflects the accumulated wisdom of many years and many sources, from mother to Martha to Alice (Waters). Roasting it on a bed of shallots is a technique swiped from my Thanksgiving turkey; it helps the bird. In a small bowl, whisk together herbs, garlic, lemon zest, sea salt, and olive oil. Thoroughly massage the herb mixture on the outside and inside of the bird.
Scarborough Fair "Beer Can" Style Roast Chicken - A delicious roast chicken cooked "beer can" style using the Steam & Infuse attachment in my Stoves cooker. This way of cooking a chicken vertically over the Steam & Infuse™ attachment keeps the chicken moist, whilst imparting a wonderful herbal flavour, and, browning the chicken all over. Still tastes delicious!) The perfect roast chicken, using Scarborough Fair herbs--parsley, sage, rosemary and thyme and organic free-range chicken. Scarborough Fair chicken is stuffed with four herbs; parsley, sage, rosemary and thyme. In times-gone-by, herbs were used not only to add flavour, but to symbolise and celebrate occasions and emotion.
