While the milk is warming, put cocoa powder and sugar into a mug. A spicy 'note' with each sip This is not your mama's hot chocolate. The chili should peek through with each sip (with a spicy 'hola'). Add the rest of the milk and salt.
In a medium pot over low heat, whisk together milk, cocoa, maple syrup/brown sugar, vanilla, nutmeg and chilli/cayenne. Stir in cinnamon sticks and star anise and bring to a simmer. This makes the hot chocolate extra creamy and luxurious so I definitely recommend making it! But it is also delicious without it if you want to skip it.
