  1. Blend everything except chicken until smooth.
  2. Clean and pat dry chicken,marinade with blended curry sauce overnight or 4 hour at least.
  3. Cover chicken with alluminium foil,you will have sauce left in the bowl,save it...now roast at 180c for 1hour and 20 minutes ,then open foil and roast it 15 more mins,to brown skin ...
  4. Bring curry sauce in the bowl to simmer, reduce some liquid ,use to pour on chicken pieces while serving.
  5. To serve,pour sauce on pieces chicken serve with fried rice or vegetables :).

I wish I had left out the lemon and the cayenne because I thought it tasted better before those. Put the chicken in a roasting tin or large casserole. Roughly chop half the ginger and put into the cavity of the chicken with the lemongrass and half the lime, then tie the legs together with string. The chicken is skinned before seasoning and cooking, not a demanding job but one that requires care. Dust chicken with chili powder and black pepper, enclose in foil and crimp to seal.
