I love how the cheesy taco meat blends so well with the crunchy egg roll crust. I made my egg rolls pretty basic with just meat and cheese but you could add. I had some extra ground beef laying around, didn't feel like making traditional tacos again, and then saw the egg roll wrappers in the fridge.
