Ingredients of Parmigiana

  1. You need 1 of large aubergine.
  2. It's 250 g of mozzarella.
  3. It's of About 200 ml of passata sauce (see my recipe!!!).
  4. You need of Parmesan cheese.
  5. You need of Flour for dusting.
  6. It's of Fresh basil.
  7. It's of Olive oil.
  8. You need to taste of Salt.

Heat the oil in a large frying pan (or wide saucepan), add the garlic, thyme and sage, and cook gently for a few mins. Eggplant Parmesan, or eggplant parmigiana, is one of those classic Italian-style comfort foods most people enjoy. Much like lasagana, this is a casserole dish made of different layers, but here the star is globe eggplant and there is no pasta involved. Parmigiana is the Italianized name of parmiciana which, in Sicilian, means the lattice method of arranging the planks of wooden shutters.

Parmigiana instructions

  1. Wash and slice aubergine. Dry on kitchen paper on both sides. Dust lightly in flour. Heat oil in a pan. Cook until golden brown. Set a side to cool.
  2. Preheat oven to 180. In an oven tray, put a layer of passata, then aubergine, then mozzarella, Parmesan and basil. Sprinkle with salt. Continue until ingredients are used up. The top layer should have some passata and a bit of Parmesan.
  3. Bake in the oven for about 40 mins until yummy looking. Rest for 10 minutes before serving 😊.

As a matter of fact, the slices of aubergine (eggplant), which constitute the key and main ingredient of the dish, are disposed in layers transversally to each other.
